Beany Pork Sausages

All the family will enjoy this easy-to-prepare, tasty and nutritious mid week meal.

 

Serves 4.

 

8 pork sausages (or whatever sausages are available

11/2 lb potatoes or if you wish instant mash equivalent

2 carrots, sliced in discs

A knob of butter

2 tablespoons milk or cream

2 tablespoons olive oil

6 spring onions or 1 medium onion, chopped

1 clove of garlic, crushed

300g Ratatouille see here for details

300g can of mixed beans, drained and rinsed

Salt and pepper to taste

1 oz cheddar cheese, grated

A tomato, sliced or a red or green pepper, de-seeded and sliced for decoration

Chopped fresh parsley for garnish

Grill or equivalent to brown

Method

 

 

Place the potatoes and carrots in salted water and cook until tender. (Omit potato if you are using instant mash)

 

Drain and mash with the butter, milk or cream and pepper.

 

While the potatoes are cooking, heat the oil in a pan and fry the sausages until brown all over and cooked through.

 

While sausages are browning, add the onions and garlic. (If there is too much fat, drain some off). Meanwhile Pre-heat the grill.

 

Remove sausages from the pan and cut the sausages in half, return to the pan at the same time add the ratatouille and beans, season and heat through.

 

Pour the sausage mixture into a fireproof dish, cover with the potato and carrot mash (instant mashed potato, without the carrot, could be used) and spread out evenly.

 

Sprinkle the grated cheese over and decorate with slices of tomato or pepper.

 

Grill until the cheese browns. Garnish with parsley.
