Cranberry SandwichCookie Ingredients:
- 1½ Cups (225g) of Sifted Plain Flour
- ¾ Cup (80g) of Ground Almonds
- ½ Cup (125g) of Softened Butter
- ½ Cup (115g) of Caster Sugar
- ½ Cup (160g) of Cranberry Jam
- 1 Egg
Method:
- In a large mixing bowl cream together the softened butter and the caster sugar until light and fluffy
- In another mixing bowl combine the sifted plain flour and the ground almonds
- Gradually add the combined dry ingredients to the creamed mixture and mix well
- Flour a work surface
- Turn dough out onto floured work surface and knead for 30 seconds
- Shape to into a disc
- Cover dough and refrigerate for 1 hour
- Once chilled remove dough from refrigerator and uncover
- Place dough between two large sheets of baking paper
- Now with the dough between the two sheets of baking paper roll it out until very thin
- Using a 6cm (2½”) cutter cut out 40 rounds from the dough
- Now take a 2cm (¾”) cutter and cut out the centers from half of the cookie rounds
- Rework dough off-cuts and cut out some more cookie pairs
- Preheat oven to 1800C
- Place cookie tops and bottoms 3cm (1¼”) apart onto greased baking trays
- Transfer loaded baking trays into preheated oven and bake at 1800C for 12 – 15 minutes or until golden brown
- When cooked remove cookie tops and bottoms from the oven and allow cookies to cool for 5 minutes on baking trays before transferring cookies to wire racks to cool completely
- Once cookie tops and bottoms have completely cooled spread cranberry jam over the cookie bottoms (the ones without the holes cut out of them)
- Top cranberry jam covered cookie bottoms with cookie tops (the ones with the holes cut out of them)
- When all cranberry sandwich cookies have been assembled transfer them to an airtight container ready for consumption
Serving:
- These portions will yield around 1½ – 2 dozen scrumptious cranberry sandwich cookies
- Cranberry sandwich cookies are always a great favorite with the kids, so they really do make wonderful lunch box treats
- Cranberry sandwich cookies may also be served with beverages such as a cup of coffee, café late, Mocha, tea, glass of milk or milkshakes etc. or as an addition to a jar/plate of assorted cookies.
