When the weather cools down and fall is knocking hard on your door; it is the time to think of soups and stews and CHILI! Nothing warms the body and soul like chili. It starts to warm your spirit when you smell it simmering on the stove and you begin to imagine a steaming bowl of it served with biscuits or crackers. Here is a recipe for quick and easy chili made mainly with canned ingredients. Also included is a quick chili dip that can be used in a pinch when company shows up and you need a filling snack.
1 lb. ground turkey
3 cloves garlic
½ green bell pepper
3 TBsp chili powder
1 large can diced tomatoes
1 large can kidney beans
1 large can tomato soup
salt and pepper to taste
In a very large soup pot, brown the turkey, diced onion, diced garlic and green peppers in a little bit of water or oil.
Drain the grease when turkey is brown and onions are tender. Add the kidney beans, tomato soup, and tomatoes. Using the large kidney beans can, add four cans full of water. The chili mixture should be just covered with water.
Add 3 TBsp chili powder and salt and pepper to taste. Mix well. Heat through. Serve with biscuits or crackers. Serves 4-5 generously.
2 large cans of ready made chili
1 large package of cream cheese
Empty chili contents into pot. Add cream cheese. Heat and stir over medium heat stirring frequently, until cream cheese is melted into chili completely. Serve with Fritos or Tortilla Chips as a dip. Serve warm.
