How To Prepare Tender and Juicy Roasted Chicken

Preparing fabulous juicy holiday roasted chicken is a great holiday meal or it doesn’t have to a special occasion at all.  The secret to tender chicken is cooking the chicken with the right amount of seasonings.

 You will need 1 oven roaster chicken (bone in), ½ stick of butter, 2 tablespoons of poultry seasoning, 1 cup white wine, 1 teaspoon salt, 1 teaspoon black pepper, 4 strips of smoked bacon, 1 tablespoon paprika, 1 tablespoon garlic powder. 

 \Place chicken in large roasting pan, pull back skin on both sides of chicken and place butter underneath the skin.  Cut the ½ stick ob butter in half and divide the butter equally placing on each side of chicken under skin. 

 Next pour white wine over top of chicken; take 1 strip of bacon and place inside of chicken (place inside of chicken where you would normally put stuffing).  Next, place remaining 3 slices of bacon on outside of chicken evenly apart; add salt pepper, garlic powder.

 Finally, place chicken on a pre-heated 350-degree oven for approximately 2-3 hours (depending on weight and size). Chicken will be crisp, juice and will absolutely melt in your mouth.  The bacon serves to keep the chicken crispy and very juicy.  The bacon adds a bit of smoky flavor also.   

 You may also add about 3 garlic cloves to give chicken some additional flavor.  Sometimes, I turn my chicken face down in the fabulous juices for about 45 minutes while cooking in the oven.  I use some paprika as a final garnish to give the chicken a nice color.  You may even season the chicken with some shallots.
