Portuguese Risotto

If you are unable to travel and try different flavors outside the U S., try this Portuguese Risotto recipe for something different tonight at dinner. Read through the entire recipe before beginning. Serve this at home or school so others can know what food from Portugal:place> is like.

4 T. Olive oil

1/4 lb. raw rice

1/2 to 3/4 lb. cooked beef or chicken, cut in small pieces

3 peeled tomatoes

1 onion, chopped

1 clove garlic, minced

Chopped fresh parsley

A pinch of Saffron

Salt and pepper to taste

1/2 pint beef or chicken stock

Cooked frozen peas

sliced, cooked mushrooms

Heat the olive oil in a large skillet and stir in the onions, rice, meat and sliced tomatoes. Add the garlic, parsley, saffron, salt and pepper and cook, stirring for about 15 minutes. Add stock. Pour into a casserole dish. Cover the dish and cook gently in a moderate oven (about 350 degrees) for 30 to 40 minutes. Add the cooked peas and mushrooms shortly before serving.  Enjoy!
