This Holiday season brings lots of festive desserts to the table. Why not bring a pretty colorful Red Velvet Cake to the Christmas table OR Valentine’s Day Table? This recipe is easy and you’ll like it too. Nothing like the color red shows someone you love them! You need several mixing bowls for this recipe in order to bake it correctly. In a mixing bowl, cream together 1/2 C. shortening and 1 1/2 C sugar. Add 2 large eggs. Mix well.
In another small glass bowl, mix together 2 oz. red food coloring with 2 T. Cocoa with a small whisk. Add this to the other egg mixture.
In another small bowl, mix together 1 C buttermilk with 1 t. Pure Vanilla. Add this to the red batter mixture and beat well.
In yet another mixing bowl, mix together 2 1/2 C flour and 1 t. salt. Add this to the red batter and beat well for 4 to 5 minutes.
In a small bowl, mix together 1 t. baking soda and 1 t. vinegar and add to the red cake batter and beat well again.
Pour the batter into two greased and floured 9 inch cake pans and bake for 35 minutes at 350 degrees.
FOR THE ICING:
In a saucepan, Cook until thick and let cool, 5 T. flour and 1 C. milk.
In a small mixing bowl, cream together 1 C. sugar, 1 C softened butter, and 1 t. Pure Vanilla.
Pour the cooled flour/milk mixture into the butter mixture and beat well. Frost cooled cake.
Store in refrigerator.
